Ingredients:
1 whole chicken
1 large potato
3 Tb of olive oil
2 cups water
1/2 Tb of cornstarch
1 bell pepper
1 tomato
1 yellow onion
1 clove or 2 teaspoons of garlic powder
1 teaspoons salt
2 Tb of adobo seasoning
1 Tb of Kickin chicken seasoning
2 leveled Tb of Jamaican or plain curry powder
A dash of cumin powder
A dash of turmeric powder
2 Tb of chopped ginger
3 sprigs fresh thyme
Directions:
- Chop the chicken up into small pieces. Pat dry with paper towels, set chicken aside.
- Chop the onion, ginger, bell pepper, tomato and garlic into small pieces.
- Add all of the seasoning to the chicken and allow it to marinate in the fridge for 1 hour or overnight.

Chop the potato into small pieces and let it rest in cold water.

Add 1 Tb of olive oil to a pot and start sautéing the chopped garlic, onion, bell pepper and tomato for 2 min on low heat. Remove mixture and set it aside.

Before you start browning the chicken make sure that the chicken only has seasoning and nothing else.

Add 1 Tb of oil to the pot and start browning the chicken a few pieces at a time for 2-5 minutes each side.

Remove the browned chicken from the pot.

Add 1 Tb of olive oil with the chopped garlic, curry, cumin, turmeric and chopped ginger to the pot. Stir and simmer on very low heat for 1 min.

Add 1 cup of water with 1/4 Tb of cornstarch to the pot and bring the curry mixture to a low boil about 1 min.

Add back the chicken with the potatoes, onions, garlic, bell pepper and thyme.

Cover pot and simmer until the sauce has a thick consistency about 30 min.
You can serve the curry chicken with white or brown rice and some plantains!
