Well, It is the best salt fish fritters Of my life. 😉
For the last year I have been working on a starfish recipe for months and I’ve tried it 10 times to get this just right.
How can you not like fried dough?
Crispy on the outside and hot, soft and savory on the inside.
This dish is delicious and amazing!
Ingredients:
1/2 cup flour
1/4 tsp salt
1/2 tsp Black Pepper
1 tsp dried or fresh thyme
1/4 tsp of scotch bonnet pepper, chopped optional (very HOT)
1 teaspoon of onion, chopped
1/2 cup scallion, chopped
1 tbsp tomato, chopped
1/2 cup milk
1 1/2 cup vegetable Oil
4 oz salted cod-fish ( soaked in water debone skin removed and finely chopped)
Directions:
In a large bowl place all ingredients together (except the oil). Mix well.
The batter should be thick, if it is too thick add more milk.
In a large skillet heat the vegetable Oil.
Drop batter by tablespoons full into hot oil and fry until brown on one side, turn and continue frying until done.
Drain on a paper towel. Serve hot
*The salt fish can be soaked overnight or boiled for 30 minutes before you use it.
