Brown Stew chicken is one of my absolute favorite dishes to make, I’ve just about perfected it. Why do we call it brown stew chicken? Simple, in the beginning process of cooking the chicken it turns brown when it’s fried in hot oil.
I would differently say that brown stew chicken (next to curry chicken) is the go to meal in Jamaica. It’s easy to make and the ingredients are simple to find.There are a lot of variations to this meal, you could either fry the chicken and stew it or saute the chicken before you stew. When cooking, one of the most important things to have in your pantry is salt.
Adding salt to your meat will add flavor and it helps create the foundation for your sauce later.
Let’s talk about sides! White or brown rice works perfectly for brown stew chicken. You can add fried plantains or dumplings with boiled green bananas.
Ingredients:
1 small whole chicken, cut into portions
Your favorite seasonings, I use:
3 teaspoons of adobo seasoning
1 packet of Sazón Goya
3 clove of garlic or 2 teaspoon of garlic powder
1 large tomato chopped
1 small onions, sliced or minced
2 -3 sprigs of fresh or 1 teaspoon of dried thyme
1 teaspoon pimientos (optional)
1 teaspoon allspice (optional)
½ tablespoon flour or cornstarch
1 tablespoon oil (for browning)
1/4 to 1 cups of water (for simmering)
Instructions:
- Wash chicken and cut into portions.
- Combine seasonings, tomato, onion, garlic, thyme, allspice and pimento in a large bowl with the chicken pieces.
- Cover and marinate for one hour or longer.
- Heat oil in a pot or large saucepan.
- Shake off the seasonings as you remove each piece of chicken from the marinade, you want to remove the tomato, onion, garlic, thyme, allspice and pimento so that the chicken does not burn.
- Lightly brown the chicken a few pieces at a time for about 4-5 minutes on low heat.
- Place browned chicken pieces on a plate to rest while you brown the remaining pieces.
- Drain off excess oil and return the chicken, tomato, onion, garlic, thyme, allspice and pimento to the pan. Add ½ cup of water at a time. Stir and cook over medium heat for 10 minutes.
- At this time check your sauce to see if it needs some salt. Mix flour or cornstarch and 2 tbsp. of water add to the pot and stirring constantly. Cover the pot, turn heat down to minimum and cook for 15-20 minutes or until tender. If your sauce looks as if it’s going to dry out, add the remaining amount of water to the pot.
Serve hot over your favorite rice.
