Cabbage is part of the cruciferous family of vegetables named because of the cross (crucifix) shaped flowers. Medical researchers have found that the phytochemicals in cabbage known as indoles inhibit the growth of colon, stomach and breast cancer.
On the down side, excessive amounts of cabbage in the diet may lead to problems with the thyroid gland. Cabbage prepared in coleslaw has significant amounts of iron, vitamin C, potassium and calcium.
Ingredients:
1 Green cabbage about 2 lbs
1 medium Carrot
1 medium tomato
1 medium yellow onion
1 green bell pepper
1 Tb of oil
Directions:

Slice cabbage into thin strips.

Slice carrot into thin strips.

Chop bell pepper.

Dice the tomato.

Dice the onion

Add oil to the pot and start to sauté the carrot, bell pepper, tomato and onion.

Stir and cover for 5 min on low heat.

Add the shredded cabbage a cup at a time stirring the mixture as you go, so that the veggies are mixed together.

Cover the pot and let it cook for 10 mins on the lowest heat possible. The moisture from the tomato and onion will help cook the cabbage.

After 10 mins you will notice that the pot now has some extra liquid, drain the extra water in a colander or strainer.

Serve at room temperature with all of our popular Caribbean dishes.
