I love eating anything by Healthy Choice.
For this recipe I’m using the tortellini as the side and cooking stew chicken breast as the protein.
Ingredients:
2 chickenbreast1 onion1 tomato
1 green bell pepper
2 tbsp. of olive oil
1 tsps. of browning
1/4 cup of water
Seasoning (your choice)
1 box of healthy choice tortellini
Directions:
1. Clean and wash chicken.
2. Chop onion, tomato and bell pepper.
3. Heat a skillet to medium heat. Add the 1 tbsp. of olive with the chop veggies and sauté until translucent about 10 min. on low to medium heat.
4. Pour the veggies out on to a plate and clean the skillet with a paper towel.
5. Add 1 tbs. Of olive oil to the skillet. Bring to a medium heat and add both chicken breast. Brown for 5 min. on each side.
6. In a small bowl add the 1 tsps. of browning to 1/4 cup of water and mix until the browning is dissolved . (This is going to add color to the chicken.) Pour into the skillet and cover. Cook for 10 min. On low heat.*Here is a tip: whenever I cook I always use a thermometer. Chicken cooks at 165 degrees.
7. Take out your package of healthy choice tortellini and heat according to package directions.
8. Serve chicken with tortellini.
